Try This!

 Beef & Barley Soup

This recipe provides 6 servings.

Ingredients:

1)    1 pound beef stew meat, cut into 1-inch pieces

2)    1 tablespoon vegetable oil

3)    1 medium onion, finely chopped

4)    2 cloves garlic, minced

5)    8 cups beef broth

6)    1 cup dry red wine

7)    1 teaspoon dried oregano

8)    1 teaspoon dried basil

9)    1 bay leaf

10) 1 cup sliced celery

11) 3 parsnips, peeled and chopped

12) ½ cup barley

13) 8 ounces sliced mushrooms

14)  Sea salt to taste

15)  Freshly ground pepper to taste

 

Instructions:

1)    Season beef with salt and pepper. Heat oil in a large stockpot over high heat. Add meat: cook 5 minutes or until browned. Add onion and garlic and cook 5 minutes, until onion begins to soften. Add broth, wine, oregano, basil and bay leaf; bring to a boil. Reduce heat to medium-low; simmer, covered for 1 hour.

2)    Add parsnips, celery, barley and mushrooms. Simmer, covered for approximately 35 minutes, until tender.
