One to Remember

Chicken, Mushroom & Wild Rice Soup

This recipe provides 4 servings.

Ingredients:

1)    1 pound chicken breasts, cut into ½ inch pieces

2)    1 large shallot, minced

3)    2 medium size carrots, minced

4)    2 celery stalks, minced

5)    8 ounces sliced cremini mushrooms

6)    2 garlic cloves, minced

7)    1 ½ teaspoons sea salt

8)    ½ teaspoon freshly ground pepper

9)    ½ teaspoon dried thyme

10) ¼ teaspoon dried sage

11) ¼ teaspoon dried rosemary

12) 1 bay leaf

13) 6 cups low sodium chicken broth

14) 1 (6-ounce) package quick-cooking brown and wild rice blend

 

Instructions:

1)    Combine all ingredients in a 6-quart slow cooker.

2)    Cover and cook on low for 4 hours or until rice is tender
