Chicken, Mushroom & Wild Rice Soup
This recipe provides 4 servings.
Ingredients:

pound chicken breasts, cut into ½ inch pieces

large shallot, minced

medium size carrots, minced

celery stalks, minced

ounces sliced cremini mushrooms

cups low sodium chicken broth

(6-ounce) package quick-cooking brown and wild rice blend
Instructions:
1) Combine
all ingredients in a 6-quart slow cooker.
2) Cover
and cook on low for 4 hours or until rice is tender
