Cajun Burger Bites

This recipe makes 16 min-bites


1) 1 pound 93%-lean ground turkey
2) 1/2 cup chopped green onions
3) 2 teaspoons Cajun  seasoning
4) 2 teaspoons hot pepper sauce
5) 1/2 teaspoon sea salt
6) 1/2 teaspoon fresh ground
7) 2 teaspoons extra virgin olive oil
8) 16 waffle-cut sweet potato fries
9) 1/2 cup lite sour cream party dip
10) 1/2 cup salsa


1) In a large bowl, mix/combine green onions, turkey, Cajun seasoning, hot pepper sauce, salt and pepper. Shape mixture into 16 equal size patties.

2) In a large nonstick skillet heat oil over medium heat. Add half of the patties and cook until browned and cooked to 160 F, approx. 5 mins. per side. Remove the patties, place on a platter; cover and keep warm. Repeat process with remaining patties.

3) In the meantime. cook sweet potato fries according to package directions. To serve, spread party dip onto sweet potato fries; top with burger bites and salsa.

90 calories per burger bite!

Maple-Roasted Sweet Potato Wedges

This recipe provides 8 servings


1) 2 1/2 lb sweet potatoes, peeled and cut into 3'' by 3/4''
2) 3 tablespoons olive oil
3) 3 tablespoon maple syrup
4) 1 tablespoon fresh lime juice

1/2 teaspoon red-pepper flakes (optional)


1) Heat oven to 450 degrees F. Toss sweet potatoes with oil and 1/2 tsp each salt and pepper on baking sheet. Roast  in lower third of oven, without turning, approx. 25 mins. Flip potatoes and continue to roast until  golden and tender, approx. 7 mins longer.

2) Whisk together maple syrup, lime juice, and red pepper flakes (if using). Drizzle over potatoes and toss to coat. Bake until potatoes are heated through and syrup forms a glaze, approx. 3 mins. ( be cautious not to burn).  Ready to serve!

Healthy New Year Cheese Melt

Healthy, Simple, and Tasty!

Grilled Cheddar Melt

This recipe provides 2 servings (sandwiches)


1) 4 thin slices seeded whole grain multigrain bread
2) 2 tsp. mayonnaise
3) 4 tsp. grainy Dijon Mustard
4) 2 oz. sharp Cheddar, grated ( 1/2 cup)
5) 1 medium apple, cored and thinly sliced
6) 1/2 cup baby spinach


1) Place a heavy skillet over low heat.

2) Spread mayonnaise and mustard evenly over slices of bread, mayonnaise on one side, mustard on the other side. Sprinkle half of cheese over mustard side of slices. Add apple slices, spinach and remaining cheese. Top with remaining bread slices, mustard side down.

3) Put sandwiches in skillet; weigh down with another skillet. Cook until toasted, approx. 3 mins. Turn sandwiches over, weigh down again and cook until cheese melts, approx. 3 mins. Then transfer to a plate to serve.
