Recipe of the Day

Succotash Slaw


Total Prep. Time: Approx. 20 mins


Ingredients:


1) 1 cup frozen baby Lima beans
2) 2 cups shredded cabbage
3) 1 cup whole kernel corn
4) 1/2 cup chopped sweet red pepper
5) 1/4 cup sliced green onions
6) 1/4 cup fat free Ranch-style dressing
7) 2 tablespoons nonfat sour cream



Directions:

1) Cook Lima beans according to package directions, omitting salt. Drain; rinse with cold water, and drain one more time.

2) Combine Lima beans, cabbage, and next 3 ingredients in a large bowl. Combine dressing and sour cream. Pour dressing mixture over cabbage mixture; toss well.


*Provides 5 servings (3/4 cup).*
