Avocado, Tomato and Mango Salad


Total Prep. Time: approx. 30 mins    Chill for approx. 1 hour


Ingredients:

1) mango, seeded, peeled, and cut into chunks
2) 1 tomato, cut into chunks
3) 1/3 cup thinly sliced red onion
4) 2 tablespoons snipped fresh cilantro
5) 2 tablespoons olive oil
6) 1 tablespoon white wine vinegar
7) 1 tablespoon lemon juice
8) 2 clove garlic, minced
9) 1/4 teaspoon salt
10) 1/4 teaspoon freshly ground black peeper
11) 1 avocado, halved, seeded, peeled and cut into chucks


Directions:

1) In a medium bowl combine mango, tomato, and red onion. For dressing, in a screw top jar combine cilantro, oil, vinegar, lemon juice, garlic, salt, and pepper. Cover and shake thoroughly. Pour dressing over mango mixture. Toss gently to coat. Cover and chill for approx. 1 hour.

2) Just before serving, stir in avocado
