Mango-Watermelon Salad

Mango goes very well with watermelon and tropical pineapple, also pecans add a crunchy texture.


This recipe serves 6 , one cup per serving

Ingredients:

4 cups of thinly sliced watermelon
1 ripe mango, peeled, pitted and thinly sliced
1 cup thinly sliced fresh pineapple
2 tablespoons mango chutney
2 tablespoons fresh mint, chopped
1/2 cup of pecan pieces
1/2 cup of Feta cheese


Directions:

In a medium sized bowl, combine mango, watermelon, pineapple, chutney and mint; gently stir until combined. Transfer to a platter, top with pecan pieces. And, sprinkle with Feta cheese.
